Gourmet Bahamas: Chaine des Rotisseurs Featuring Chef Volundarson and Smith

The Chaîne des Rôtisseurs is an “International gastronomic society founded in Paris in 1950. Devoted to promoting fine dining and preserving the camaraderie and pleasures of the table.”

This past Wednesday, I photographed Chef Volundarson and Chef Emanuele Smith busy at work during the Chaîne des Rôtisseurs Dinner at the Canal House.

Here are some of my favorites…

Sauteed sea scallop stacked on spinach savory rosemary-garlic polenta on a tangy sun-dried tomato artichoke pesto.

Arctic Char shipped in on ice from Iceland…

Pan seared arctic char with grapefruit butter and savory cabbage.

Seared cod topped with grilled pineapple chutney and braised julianned vegetables…

Crispy skin duck breast with cranberry red wine sauce, potato cakes and…

Chocolate glazed chocolate tart with raspberry infused liquor vanilla ice cream garnished with mint.

Riu Palace Paradise Island Restaurant

The fusion cusine “Krystal” Restaurant located in the recently renovated Riu Palace on located next door to Atlantis on Paradise Island, Bahamas.

Discover the Wonders of Chef Tim Tibbitts at East Restaurant

Originally born in Grand Bahama, the multi-talented Tim Tibbitts (Tim was also the 2006 Male Artist  of the Year at the Toronto Independent Music Awards — but that is another story) is now Executive Chef at East Restaurant on Grand Bahama Island. Tim learned much of his craft in Canada, but returned to his homeland last year to bring his unique blend of cooking wizardry to showcase the modern cuisine trends of Japan, China, Vietnam, Thailand, Malaysia and Indonesia.
